Sweet Potatoes with Maple Bacon
Overview
Sweet potatoes are a favorite of mine in the fall.
I think it’s because they pair so well with flavors like maple and bacon, which really remind me of autumn.
These are a great add to a holiday menu, or placed in a salad such as the Autumn Salad, also on my website.
Serves 4-6 as a side
Shopping List
- 4 sweet potatoes, roughly chopped into chunks
- 6 slices of turkey bacon, chopped
- 2 tablespoons maple syrup

Sweet potato instructions
Clean and dry the sweet potatoes and cut into chunks. These do not have to be perfectly symmetrical. I actually like them a little rustic looking. Place on a baking sheet and toss the potato with olive oil and season with salt and pepper. Place into preheated 425 oven oven for approximately 20-30 minutes until fork tender.
Bacon instructions
Chop the turkey bacon into bite sized pieces. In a medium pan over medium low heat, cook the turkey bacon. When the turkey bacon starts to look crispy (after about 5-10 minutes depending on thickness of the turkey bacon and size of the pan), add the maple syrup and cook for another 1-2 minutes.
Toss the bacon with the sweet potatoes and serve warm. You should also try this with toasted pecans sprinkled with cinnamon.
