Raspberry Mint Frozen Margarita

Here we are, at the end of February. In Massachusetts, it is an absolutely beautiful day!  You can feel spring in the air, and it has me longing for the days and nights we can be outside, the kids can run around, and the adults can enjoy some delicious cocktails while we’re at it. 

 When I was at Whole Foods earlier today, I was drawn to the most beautiful yellow flowers. Daffodils, tulips, and roses caught my eye, and just looking at them made me think spring (and smile!).  Then ( because I have the attention span of a gnat), I started thinking about what my family does when it’s nice out. My kids swing on the swings and run around while Justin and I listen to the Aggrolites or Pharrell and sip some cocktails.  Then I started to think about what type of cocktail what I have outside if it was just a little bit warmer. 

Being that it is Taco Tuesday, I obviously wanted a margarita!   I crafted this frozen raspberry mint margarita with a sugar rim. This drink is so refreshing I can’t wait to make it again when the weather is just a little bit warmer. Come on spring, we are waiting for you! 

Raspberry Mint Margarita  

Serves 2 

Shopping List 

  • 5 ounces blanco tequila (I used Don Julio for this one)  
  • 2.5 ounces Cointreau or triple sec 
  • 1/2 cup fresh raspberries (frozen would work well, just reduce the ice you put in) 
  • 3 limes, juiced
  • About 8-12 mint leaves
  • About a cup to a cup and a half of ice cubes
  • Lime juice and sugar for rim


Pour the tequila, Cointreau (or triple sec) , lime juice, raspberries, mint, and ice in a powerful blender and blend until smooth. Take one of the limes you used and rub it around the rim of your glass. Pour some sugar on a plate and rim the glass with the sugar. Serve with a mint or raspberry garnish and relax & breathe in that fresh air.
