Digestion and Immune Boosting Juice

When thinking of the name of this juice, I really struggled. All of the ingredients aid in digestion. They all in some way, shape, or form help in ones immunity strength. The main ingredients are rich in fiber, vitamin C, and potassium. The list goes on and on. So really, I'm just going to call this juice what it is, and that's a digestion and immune boosting juice.

Beets, carrots, and apples are the main ingredients in this juice, and are mixed with lemon, mint, strawberry, and ginger root to make a refreshing juice.

Digestion and Immune Boosting Juice with Beets, Carrots, and Apple

Serves 2

Shopping List

  • 2 peeled, raw, red beets
  • 4-5 small, peeled carrots
  • 1 large red apple
  • 1 whole lemon, rind removed 
  • 1-2" knob of ginger root
  • 4-5 large mint leaves
  • 3-4 strawberries
  • 2-3 cups of cold water
  • Handful of ice cubes

Method

In a Vitamix or other powerful blender, place all ingredients in the blender, in the order listed above. Turn the blender on high and blend for about 2 minutes. This is a thicker juice, so do not be alarmed. The combination of the ice cubes and the beets make it a smoothie like juice.
