Poaching Eggs 101
Fill a medium sized heavy bottom sauce pan with water. Add a tablespoon or two of vinegar (I use white wine or champagne vinegar) and a pinch of salt. Bring the pot to a boil.
When the water is boiling, bring down to a simmer. Crack an egg into a small bowl. Have some paper towel laid out on a flat surface. When the water is simmering, slide that egg into the water. Set your timer for 2.5 minutes. Using a slotted spoon, gently ladle some of the simmering water over the egg.
When the timer goes off, remove the egg with the slotted spoon and place on the paper towel to dry. Voilá. Poached Egg. Serve with your favorite meal and/or sauce. Like this one, quick hollandaise.
