Skillet Maple Banana Bread with Brown Sugar Bacon.
The name says it all, right?
This is my fave banana bread I've made. I've replaced the granulated sugar with maple syrup, and added a bit of cooked turkey bacon (whaaaat) and brown sugar to the bottom of the skillet- after the skillet is done preheating with some sizzling coconut oil. The result is something my daughter exclaimed as, "my world famous banana bread," after I made it just the first time. Not yet kid, but thank you for the accolades. And my inflated ego (kidding, but sure did make me feel good!).
- 1.5 cups all purpose flour
- 1.5 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/8 tsp kosher salt
- 4 ripe bananas, 3 mashed and 1 sliced; not too ripe. Pick the ones that are just starting to get spots
- 1/4 cup melted coconut oil +1-2 tbsp (eyeball it) coconut oil for the skillet
- 1 egg, room temperature
- 1.5 tsp vanilla extract
- 2 slices of turkey bacon, cooked, and chopped, you could use regular bacon, of course, but I don’t eat pork, so I’ve not tested with it!
- 1.5 tbsp dark brown sugar
Preheat your oven to 350 degrees. Place 1-2 tbsp of coconut oil in the skillet and place the skillet in the oven while it preheats.
Cook your turkey bacon, set aside to cool then chop.
Combine the dry ingredients (flour, baking powder, baking soda, cinnamon, and salt) in a bowl and set aside.
In another bowl, mix together three of the mashed bananas, oil, egg, maple syrup, and vanilla. Make a well (a little hole) in the middle of the bowl of the dry ingredients and then drop the wet ingredients into the well. Mix until JUST combined, don’t overmix. The mixture will be thick.
Slice the 4th banana into little discs if you haven’t already and set aside.
Remove your skillet from the oven and sprinkle a tablespoon or so of brown sugar and the chopped bacon all over the bottom of the skillet. Next, pour in your banana bread mix. Decorate the top of the wet bread mix with the banana discs you just sliced. Sprinkle the top of the banana bread with 1/2 tbsp of brown sugar and place the skillet in the oven for 25-30 minutes until golden brown and a tooth pick comes out clean when you test the bread. Let cool for at least 20-30 minutes before slicing and removing from the skillet.
This is the perfect (IMO) banana bread for a hosted brunch! I hope you enjoy.
