It's summer and the ice cream and popsicles are flowing for my kids like liquor at a nightclub.
I'm ALL for kids being kids and having all the kid like things, but it can't happen every day. There's gotta be a tiny bit of give and take.
So here's a really simple banana "ice cream" popsicle recipe you can use to trick out your kids. It takes no time to make and it's cold and pretty guilt free. For this recipe, I used these Tovolo silicone popsicle molds.
Banana Ice Cream Popsicles
- 3 very ripe bananas
- About a tbsp of coconut cream
- 1/2 tsp pure vanilla extract
- 1/2 cup of almond or coconut milk, if it looks too thick, add a little more)
- Handful of ice cubes
Place all ingredients in a high powered blender and then pour into popsicle molds. Place in the freezer for at least 3 hours to firm up and then let your kids (or you!) go to town.
