Almond and Chocolate Thumbprint Cookies

You know those cookies people make for holiday parties? The peanut butter ones with a Hershey kiss in the middle? These are a play on those, with under 5 ingredients. Enjoy!

Almond and Chocolate Thumbprint Cookies

Makes 12 cookies

Shopping List

  • 2 cups almond flour
  • 1/2 tsp baking powder
  • 2 tsp vanilla extract
  • 1/3 cup maple syrup
  • 4 ounces bittersweet chocolate, melted
  • coarse sea salt, for sprinkling  

Method

Preheat oven to 350 degrees. Mix together the almond flour, baking powder, vanilla, and maple syrup. Using a cookie scoop, round into balls and place on a baking sheet lined with parchment. Using your thumb, make a thumb print in each cookie.

Melt the bittersweet chocolate either using a double boiler or microwave. Check out the package instructions for assistance. Using a spoon, drizzle a little of the melted chocolate in each thumbprint. Bake for 10-12 minutes, rotating the pan halfway through.

Remove from oven and drizzle the remaining chocolate over each cookie and sprinkle a little sea salt. Let cool completely before serving.
