The crisp mornings we’ve been having lately really have me starting to feel all the Autumn flavors. School is back in session and apple season is underway! I know so many people who are struggling with the change of seasons- whether it’s transitions to get back to school for the kids, settling into the new seasons routine, or something else, change can be hard! So help yourself get over transitions by making this homemade apple pie filling. It’s just like the canned stuff but way, way better. Shopping List

  • 4 apples, I used 2 honeycrisp and 2 granny smith

  • 1 tbsp apple pie spice
  • 1/2 cup of brown sugar
  • pinch of kosher salt
  • 3/4 cup + 1 tbsp organic apple juice
  • 1 tsp pure vanilla extract
  • 1-2 tbsp arrowroot powder

Method

1. Peel and dice the apples and place them into a saucepan
2.Sprinkle the apple pie spice on top of the apples
3. Stir in the brown sugar and salt
4. Allow mixture to sit for 15 minutes
5.Pour in the apple juice and vanilla
6. Bring pot to a low boil
7. Allow mixture to cook for about 10-15 minutes, stirring occasionally, to allow the apples to cook and soften.
8. Make a slurry with the arrowroot powder and 1 tbsp juice.
9. Pour slurry into the saucepan and bring to a boil. Filling is done when it becomes slightly thick.
10. Remove from heat and pour into an airtight jar to keep in the fridge for up to a week.
