It’s the middle of winter and all I am doing is baking. So here’s my latest take on the classic blondies.
Banana Granola Butter Blondies
Makes 16-20 blondies
2 bananas, ripe
1/2 cup granola butter (you can also sub any nut butter of your choice)
2 tsp vanilla extract
3/4 cup almond flour
1/4 cup coconut flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
2.5 tbsp maple syrup
1/2 cup butterscotch chips
1/2 cup dark chocolate chips
Preheat the oven to 350 degrees. Line an 8x8 pan with parchment paper.
In a food processor, combine the banana and granola/nut butter and purée until smooth.
Add in the remaining ingredients, minus the chips. Pulse until smooth. Then mix in the butterscotch and chocolate chips.
Pour the batter in the prepared baking dish.
Bake for 20-25 minutes and allow to cool before cutting into these gooey treats.
