Mmmk. It’s November. Odd anaology for November. But I totally just got a friends save the date in the mail for their wedding in Hawaii, so that’s where my head is at!

Anyways, back to sweet potatoes. I should let it be known that for years my brother in law has always made the best Sweet Potatoes for Thanksgiving. Dude knows what the family wants! And they’re so good! 

But, because of this. I never have to make them, and have always wanted to try, so here’s what I created. It’s sweet, creamy, a little spicy, crunchy, and has a hit of bourbon that tastes just divine with the pecans on top… It checks off all the boxes for me! Hope you love it!

Shopping List

  • 5 medium sized sweet potatoes, peeled, chopped, and roasted in olive oil , salt, and pepper for 35-45 minutes (375 degrees)

  • 2 large brown eggs
  • 1/2 cup brown sugar
  • 1/4 cup grade a maple syrup
  • 1/4 cup whole milk, half and half, or light cream
  • 3 tbsp unsalted butter, divided
  • 2 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 2 tbsp bourbon
  • kosher salt
  • pepper
  • 3/4 cup pecans
  • pinch cayenne

Method

Roast cut + seasoned sweet potatoes in a 400 degree oven for 45 minutes. 

While they are roasting, prepare the wet mixture. Once sweet potatoes are done, reduce heat to 350 degrees.

In a large bowl, whisk together the eggs, brown sugar, maple syrup, milk, 2 tbsp melted unsalted butter, cinnamon, vanilla, bourbon, 1/2 tsp kosher salt + 1/8 tsp black pepper.

When the potatoes are done, mash until smooth and pour in the wet mixture. Stir til combined. 

Pour into a 8×11 buttered casserole dish.

Meanwhile, in a small pan over medium heat, melt 1 tbsp of butter. Add your pecans, a pinch of salt, and cayenne pepper. Toast on low heat, stirring occasionally, for 5 minutes. 

Sprinkle pecans over casserole.

Bake in the 350 degree oven for 30-35 minutes and enjoy!
