Garlic & Herb Layered Dip with Pine Nuts and Sundried Tomato

Inspired from a recipe I discovered years ago, this is a layered cheese dip that’s perfect for any happy hour, game night, holiday party, or just because.

With a mix of store bought and homemade, it’s an easy to whip up recipe that’s a flavor bomb in your mouth.

Garlic & Herb Layered Dip with Pine Nuts and Sundried Tomato

Shopping List

  • 1 container (6-8 ounces) of garlic & herb spread such as Alouette or Boursin

  • 1/4 cup of basil, julienned

  • 1/4 cup of pine nuts

  • 1/4 cup of sun dried tomatoes in oil , chopped into small pieces

  • Squeeze of fresh lemon juice

  • 1/2 cup of part skim ricotta

  • kosher salt, fresh cracked pepper

 

Method

Grab a small-medium glass bowl and place a layer of plastic wrap within it. Spray wrap (not the bowl) with non stick spray.  Set aside.

In another small bowl, place the ricotta, 1/2 of the sundried tomatoes, 1/2 the pine nuts, and 1/2 the basil, the lemon juice, plus a heavy pinch of salt and a few grinds of pepper. Mix until combined.

Layer the bottom of the bowl lined with plastic wrap with 1/2 the container of garlic spread. Next layer 1/2 the ricotta spread. Repeat again with the garlic spread and again with the ricotta spread. Place more plastic wrap on the top and place in the fridge for about a half an hour or until ready to serve. 

When ready to serve, grab your platter. Remove the top layer of plastic wrap on the bowl. Place the platter on the top of the bowl and flip slowly so the board is now on the bottom. Gently lift the bowl and the layered dip should have slid right out of the mold. Isn’t she pretty?? Decorate the platter and top of the dip off with the remaining sundried tomatoes, basil, and pine nuts. Maybe even decorate the top with some whole basil leaves as shown.

Serve with your favorite crackers or crusty bread.
