There’s something about ginger and coconut that is so refreshing. This is the perfect smoothie to start the new year out right.
Ginger Coconut Smoothie
- 2 cups unsweetened vanilla coconut milk
- 1-2 knobs of fresh ginger - about 1” by 1-2”
- 1 small banana
- 2 medjool dates, pitted
- 1 cup of ice
Place all ingredients in a blender and blend until smooth.
