Ginger Coconut Smoothie

There’s something about ginger and coconut that is so refreshing. This is the perfect smoothie to start the new year out right.

Ginger Coconut Smoothie

Serves 2

Shopping List 

  • 2 cups unsweetened vanilla coconut milk
  • 1-2 knobs of fresh ginger  - about 1” by 1-2” 
  • 1 small banana
  • 2 medjool dates, pitted  
  • 1 cup of ice


Place all ingredients in a blender and blend until smooth.
