Homemade Blue Cheese Dressing

Have you ever tried making homemade dressing? 

It's SO much tastier that the store bought stuff. Takes a very minimal amount of time and completely worth the (also minimal) effort.

For this recipe I used Gorgonzola, but really any blue variety will work; just make sure you  use one that you love! This dressing is PERFECT on an iceberg wedge or just with some sliced summer time heirloom tomatoes.

Homemade Blue Cheese Dressing

Serves 4

Shopping List

  • 3-4 ounces crumbled gorgonzola cheese
  • 4 ounces of heavy cream; you can sub buttermilk, or sour milk*
  • Splash of champagne or white wine vinegar
  • Kosher salt and freshly cracked pepper

*to make your own buttermilk/sour milk, add a tablespoon of vinegar into your measured cup of milk and let sit for 5-10 minutes

Method

Add all ingredients except salt and pepper in a bowl. Whisk until smooth. Taste for seasoning, add a touch of salt (start small, like 1/8 tsp) and some pepper. Chill until ready to serve.
