Instant Pot Spicy Pineapple Chicken

Overview

Last week I was looking in the fridge and found pineapple juice and jalapeños.

And from there, Instant Pot Spicy Pineapple Chicken was born. It’s spicy (but manageable), it’s sweet (but not too sweet), and goes REALLY REALLY well with the Sesame Soy Guacamole!

Shopping List

  • 1.5 lbs boneless skinless chicken breast; thighs would work also

  • 1 jalapeno, diced- ribs + seeds removed

  • 1 shallot or 1/2 yellow onion, diced

  • 2 large garlic cloves, minced

  • 1″ knob of ginger, peeled + minced

  • 12 oz pineapple juice + 1 tbsp starch of choice

  • 2 tsp ground cumin

  • 2 tsp ground chili pepper

  • 1 tsp kosher salt

  • 2 tbsp garlic chili paste (like Sriracha but the paste)

Method

Place all ingredients in the instant pot and set on low pressure for 15 minutes. Release the pressure of the instant pot and shred the chicken.
