No Bake Oatmeal Cookie Bites

We have had some oppressively hot days here in Massachusetts and honestly, cookie and baking have been the last things on my mind. Turning the oven on just seems daunting to me.

I mean, I want a baked good. To be perfectly clear, I want an oatmeal cookie.

But again. How do I do this without turning the oven on?

For a while now I have been playing around with no bake cookie bites or protein bites and this is a good one. These No Bake Oatmeal Cookie Bites have that warmth from cinnamon, are full of oats, include protein from cashew butter, and are refined sugar free, if you choose to use a sugar substitute or use coconut palm sugar. Done in 5 minutes, it beats turning the oven on in that 95+ degree weather.

Makes 10-12 bites

Shopping List

  • 3/4 cup old fashioned oats

  • 3/4 cup cashew butter

  • 1/4 cup chopped walnuts or raisins, optional

  • 2 tbsp golden monkfruit sweetener or coconut palm sugar

  • 1 tsp pure vanilla extract

  • 1 tsp cinnamon

  • 1/2 tsp kosher salt

  • 1/4 tsp ground ginger

  • 1/4 tsp ground cloves

Method

Stir all ingredients in a bowl. Batter will be thick. Using a cookie scoop, make into balls and store in the fridge for up to a week.
