Togarashi Pickled Onions

Overview

I have been super into pickling lately! So easy to throw together and lasts forever in the fridge. The perfect accompaniment for sandwiches or salads, it’s great to have on hand!

I made these pickled onions w/ Togarashi seasoning for a little extra kick and also because I have been super into Asian flavors lately! Togarashi seasoning usually has sesame, nori, chili, and orange peel and it’s so good!

Shopping List

  • 1-2 sliced red onions

  • 1/2 cup rice vinegar

  • 1/2 cup of water

  • 1 -2 tbsp of togarashi seasoning

  • 2 tbsp of honey

  • 1 tsp of kosher salt

Method

Combine the 1/2 cup rice vinegar + 1/2 cup of water, 1 -2 tbsp of togarashi seasoning, 2 tbsp of honey, 1 tsp of kosher salt in a small pot and bringing it to a boil.

Allow to simmer for 20-30 minutes then remove from the heat, allow to cool and pour over 1-2 red onions, sliced (I store mine in mason jars). Add in a little extra seasoning + juice of 1 lime. Store it in the fridge and enjoy anytime your meal needs an extra uumph! #letscookanddrink #jackiecooksanddrinks
