Elote Inspired Salad with Summer Squash

Overview

The perfect summer salad that is inspired by the flavors of Mexican street corn.

One of my favorite cuisines is Mexican food, and one of my husbands favorite ways to eat corn is elote. If you’re unfamiliar, elote means corn cob, and the cobs are grilled and slathered in a mayo sauce with chili, cheese, and lime. 

My salad is inspired by the flavors of traditional elote, but the corn is not grilled (in fact all the vegetables are raw making this salad super easy to make)!

Shopping List

  • 3 ears of corn
  • 1 small summer squash, diced
  • 1 small zucchini, diced
  • 1 small tomato, diced
  • 1/4 cup red onion, diced
  • 2 tbsp scallions, sliced
  • 1/4 cup greek yogurt
  • 1/4 c mayo
  • 1.5-2 tsp tajin or chili powder
  • juice of 1 lime
  • 1-2 tsp hot sauce
  • 1/4 cup shredded Mexican cheese
  • 2-3 ounces cotija cheese, grated

Method

In a bowl, combine the greek yogurt, mayo, chili powder, lime juice, and hot sauce. Stir until well mixed. Season with salt + pepper to taste.

In a large bowl, combine the corn kernels, squash, zucchini, tomato, red onion, scallions, and shredded Mexican cheese.

Toss the salad with the dressing and then sprinkle the cotija cheese throughout the salad. Serve immediately, or better yet, allow to sit in the fridge for a few hours before serving so the flavors can deepen!
