Hood Cottage Cheese with Strawberry Brunch Parfait

There’s nothing much I love more than hosting a meal.

Brunch is one of those meals that is just super fun for to host for me; baked goods, a smoked fish spread, some salads, a parfait like this one; mimosas, fresh juice, bloody mary bars…the possibilities are endless. I whipped up this beautiful parfait using Hood Cottage Cheese with Strawberry and it did not disappoint! It couldn’t be easier! It’s rich and creamy, slightly sweet, and jam packed with protein- it’s a brunch dessert!

Makes 4 parfaits

Shopping List

  • 1 , 16 ounce container of Hood Cottage Cheese with Strawberry

  • 1/2 cup of strawberry preserves; homemade or store bought

  • 1/4 cup of chopped pecans

  • 1/4 cup of coconut

  • 1/4 cup of old fashioned oats

Method

In a non sticks saute pan over low heat, combine the pecans, coconut, and oats. Toast until lightly golden and there’s a nutty smell. Remove from the heat.

Grab 4 bowls or 4 dessert dishes. Place 1/4 cup of cottage cheese on the bottom of each dish. Then layer one tablespoon of preserves on top of the cottage cheese, followed by 2 tablespoons of the pecan oat mix. Repeat the layers. Place in the refrigerator until ready to serve or serve immediately!
