Last week I was looking in the fridge and found pineapple juice and jalapeños.
And from there, Instant Pot Spicy Pineapple Chicken was born.

Ingredients

boneless skinless chicken breast; thighs would work also

jalapeno, diced- ribs + seeds removed

shallot diced

large garlic cloves, minced

knob
ginger, peeled + minced

pineapple juice + 1 tbsp starch of choice

tsp
ground cumin

tsp
ground chili pepper

tsp
kosher salt

tbsp
garlic chili paste (like Sriracha but the paste)
Instructions
Place all ingredients in the instant pot and set on low pressure for 15 minutes. Release the pressure of the instant pot and shred the chicken.
