- 4 beets, cooked + roughly chopped roasting is best, 400 degrees, wrapped in foil, 45-60 minutes depending on size of beets
- 4 cloves garlic
- 1 lemon, zest + juice
- 1 15 oz can chickpeas, drained and rinsed
- 4 tbsp tahini
- 1/4- 1/2 cup extra virgin olive oil
- 1 tsp kosher salt
- few grinds of fresh cracked pepper
