Tzaziki Farro Salad

For the salad
- 1 bunch (or 15 oz package) spinach, washed and chopped
- 1 cup cherry tomatoes, sliced
- 1 handful fresh dill, chopped
- 1 handful fresh parsley, chopped
- 1 15 oz can chickpeas, drained and rinsed
- 3 ounces crumbed feta
- 1 cup farro, cooked, drained, and rinsed (3 cups water to a boil, add 1 cup farro, bring to simmer for 30 min uncovered
- salt and pepper
For the tzaziki
- 3/4 cup greek yogurt
- 2 cloves garlic, finely chopped
- 1/2 cucumber, chopped
- 4-5 large mint leaves, julienned
- 1/2 lemon, juiced
- heavy pinch of salt + few grinds of pepper
I mean, this speaks for itself but here you go:Combine all the salad ingredients in a large bowl (with me so far?). Sprinkle a pinch of salt over the whole thing and stir.In another small bowl, whisk together lemon juice, greek yogurt, chopped garlic, mint leaves, and cucumber. Add your salt and pepper to taste.
