Pantry Romanesco Sauce with Roasted Red Peppers + Sun Dried Tomatoes

When a tomato sauce just won't do, this flavor packed romanesco sauce will save the day.

- 1/2 cup almonds
- 1 cup roasted peppers (drained if in water or oil)
- 1/2 cup sun dried tomatoes (drained if in water or oil)
- 1/2 cup parsley
- 1 tbsp red wine vinegar
- 1/3 cup extra virgin olive oil
- 4 cloves garlic
- 1/2 tsp kosher salt
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes
Combine all ingredients in a food processor and blend until smooth in texture. Drizzle in more olive oil, while the food processor is going, until desired consistency is reached. I like to keep this on the thicker side, and then thin out the sauce depending on what I use it for. For instance, for pasta, I add a little more olive oil + thin out with pasta water. For crositini, I leave it how it is!
