Lemon Poppy Cookies
Lemon and poppy go together like chocolate and peanut butter so you basically need these cookies.

For the cookies
- 12 tbsp room temperature butter
- 1 cup sugar
- 1 large lemon, zested
- 1 tbsp 1 tbsp + 1 tsp lemon extract
- 1 tsp vanilla extract
- 2 large eggs room temperature
- 2 cups all purpose flour spooned/leveled
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp poppy seeds
For the frosting
- 2 oz fresh lemon juice
- 1 1/4 cups powdered sugar
- 1 tbsp couple splashes of water to loosen consistency if needed
- 1/8 tsp salt
Preheat your oven to 350 degrees F and line a couple baking sheets with parchment paper.In a small bowl, combine the sugar and the zest of the lemon. Using your hands, mix until the sugar looks like sand.In another bowl, whisk together the flour, baking powder, baking soda, and salt. Next, using a stand mixer or hand mixer, beat the butter until light and fluffy. Slowly add in the sugar and zest and mix until combined. Add in the lemon juice and vanilla extract, and the eggs, one at a time, making sure to mix completely before adding the second egg. Slowly add the flour mix to the wet mixture and mix until just combined. Pour in the poppy seeds and mix until incorporated. Now, time to make the cookies. You can use a cookie scoop or a tablespoon and place the round cookie dough balls on the baking sheet, 2" apart. Bake in your preheated oven for 9-11 minutes. Remove the cookies from the oven and allow them to sit on the baking sheet for a couple minutes before moving the cookies to a baking sheet to finish cooling. For the glaze, whisk together the lemon juice, salt, and powdered sugar until the consistency is smooth. Add water as needed. Drizzle the cookies with the glaze and enjoy!
