Elote Inspired Salad with Summer Squash

- 3 ears corn
- 1 small summer squash, diced
- 1 small zucchini, diced
- 1 small tomato, diced
- 1/4 cup red onion, diced
- 2 tbsp scallions, sliced
- 1/4 cup greek yogurt
- 1/4 cup mayo
- 1.5-2 tsp tajin or chili powder
- 1 large lime, juiced
- 1-2 tsp hot sauce
- 1/4 cup shredded mexican cheese
- 2-3 ounces cotija cheese, grated (can sub parmesan)
In a bowl, combine the greek yogurt, mayo, chili powder, lime juice, and hot sauce. Stir until well mixed. Season with salt + pepper to taste.In a large bowl, combine the corn kernels, squash, zucchini, tomato, red onion, scallions, and Mexican cheese.Toss the salad with the dressing and then sprinkle the cotija cheese throughout the salad. Serve immediately, or better yet, allow to sit in the fridge for a few hours before serving so the flavors can deepen!
