Cheesy Stuffed Baby Bell Peppers

Sometimes you just need a vessel for cheese.
… And when I say vessel, I mean a way to get cheese into my face quickly.
We usually almost always have bell peppers at home, and recently I have been getting baby bell peppers at our CSA! They’re so cute! I played around and ended up stuffing them with cheese, then roasting them and the end result was everything you need for a quick snack, side, or game day appetizer!

Shopping List

10-12 baby bell peppers, rinsed, sliced in half, and cleaned out

1, 6 ounce log of goat cheese

6 ounces of mozzarella cheese

1/2 tsp kosher salt

fresh cracked pepper
- fresh chopped herbs: basil, chives, dill, oregano, thyme. I love basil + chives for this!
Method
Preheat oven to 350 degrees.
In a small bowl, mix together the goat cheese and mozzarella cheese. Sprinkle the salt, pepper and herbs.
Place a couple tsp- tbsp of cheese mixture in each pepper half.
Place in the 350 degree oven for about 15 minutes until golden and bubbly. Serve immediately!
