Pumpkin Pie Smoothie

Overview

Maybe your sick of the thought of pumpkin, but I love it throughout the fall and winter.

Pumpkin pie has the spices and aromas of Thanksgiving and home. But you really shouldn’t eat it ALL the time, so here’s a smoothie to nix that craving. This is healthy enough for breakfast and sweet enough for dessert (maybe add a little homemade whipped cream on top!)

Shopping List

  • 1 cup pumpkin puree
  • 1 large banana
  • 1 cup of any type of milk you want…Cow, soy, almond, coconut
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon of maple syrup
  • 1 teaspoon of pumpkin pie spice, plus more for garnish
  • 1/2 cup of ice

Method

Blend all ingredients in a blender until creamy and smooth. Pour into glass, sprinkle a little pumpkin pie spice on top. Serve immediately.
