Raspberry Mint Frozen Margarita

Overview

We all used to lick the bowl when we were kids. Stop. You know you did.

I mean, I want a baked good. To be perfectly clear, I want an oatmeal cookie.

But again. How do I do this without turning the oven on?

For a while now I have been playing around with no bake cookie bites or protein bites and this is a good one. These No Bake Oatmeal Cookie Bites have that warmth from cinnamon, are full of oats, include protein from cashew butter, and are refined sugar free, if you choose to use a sugar substitute or use coconut palm sugar. Done in 5 minutes, it beats turning the oven on in that 95+ degree weather.

Makes 10-12 bites

Shopping List

  • 5 ounces blanco tequila (I used Don Julio for this one)  
  • 2.5 ounces Cointreau or triple sec 
  • 1/2 cup fresh raspberries (frozen would work well, just reduce the ice you put in) 
  • 3 limes, juiced
  • About 8-12 mint leaves
  • About a cup to a cup and a half of ice cubes
  • Lime juice and sugar for rim

Method

Pour the tequila, Cointreau (or triple sec) , lime juice, raspberries, mint, and ice in a powerful blender and blend until smooth. Take one of the limes you used and rub it around the rim of your glass. Pour some sugar on a plate and rim the glass with the sugar. Serve with a mint or raspberry garnish and relax & breathe in that fresh air.
