Chocolate Chip Muffins

Overview

Chocolate Chip muffins that you’re whole family will love!

Muffins are one of those baked goods that in my experience are very quick and easy to make, but they also can be real easy to screw up!

FEAR NOT, this recipe is a good one as long as you DO NOT OVERMIX your batter (again, speaking from experience). No one wants chocolate chip hockey pucks (yes, speaking from experience)!

My chocolate chip muffins are loaded with chocolate, sprinkled with turbinado sugar AND have greek yogurt in them so we have a little extra protein boost in there!

Shopping List

  • 2 cups all-purpose flour, spooned + leveled
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • ½ cup cane sugar
  • ½ cup light brown sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 cup Greek yogurt
  • ⅔ cup  semi-sweet chocolate chips. Extra for the top of the muffins
  • Turbinado sugar, also for the top of the muffins

Method

  1. Preheat the oven to 350° Fahrenheit
  2. Spray a 12-cup muffin pan with nonstick cooking spray; I like to use the baking spray which has a little flour in it
  3. In a medium- sized bowl, whisk together the flour, baking powder, baking soda, and salt
  4. In a larger bowl, whisk the melted butter, granulated sugar, brown sugar, and vanilla extract all together until combined
  5. Whisk in the eggs in and then the Greek yogurt
  6. Pour in the dry ingredients to the wet and whisk until combined- be careful to not overmix!
  7. Fold in the chocolate chips
  8. Using a large cookie scoop, scoop batter evenly into the sprayed muffin pan until the wells are filled 3/4 of the way
  9. Sprinkle the muffin tops with extra chocolate chips and turbinado sugar
  10. Bake for 15-20 minutes, until puffy and golden
  11. Remove from the oven and allow the muffins to cool for 5-10 minutes in the pan and then remove to a cooling rack until fully cool
  12. These muffins will stay fresh for a few days in an airtight container. Warm the muffins at 300 degrees for 5 minutes to enjoy after the first day.
