Tzaziki Farro Salad

Overview

This whole everyone being home all the time is getting old. It seems like every time I try to get something accomplished- whether it’s the laundry, a workout, or cooking— someone is allllways watching me, trying to talk to me, or jump on me (puppy I am looking at you).

You know what else I hear is getting old? Options for lunch. Salads, sandwiches…they can all get stale. One of my friends recently posted about using tzaziki sauce in a side dish. Ever since then I have been craving it! So, I started playing around with this TZAZIKI FARRO SALAD! It is full of flavor due to the fresh herbs (dill! parsley! mint!), has a bunch of different textures (feta cheese! spinach! chickpeas! tomatoes!), and healthy whole grains (farro! which btw, is completely underrated in my opinion). Then, this salad is tossed with a quick throw-together tzaziki sauce and it is as fresh as your tween talking back to you.

Try making this one, it makes enough for 4-6 people, but if your kids are like mine, they won’t eat it because it is flavor packed, so you will have lunch for a couple of days.

Shopping List

  • 1 bunch (or package) of spinach, wash and chopped

  • 1 cup cherry tomatoes, sliced

  • 1 handful fresh dill, chopped

  • 1 handful fresh parsley, chopped

  • 1 can of chickpeas, drained and rinsed

  • 3 ounces crumbed feta

  • 1 cup farro, cooked, drained, and rinsed (3 cups water to a boil, add 1 cup farro, bring to simmer for 30 min uncovered

  • salt and pepper

For the tzaziki

  • 3/4 cup greek yogurt

  • 2 garlic cloves, finely chopped

  • 1/2 cucumber, chopped

  • 4-5 large mint leaves, julienned

  • 1/2 lemon, juiced

  • heavy pinch of salt and few grinds of pepper

Method

I mean, this speaks for itself but here you go:

Combine all the salad ingredients in a large bowl (with me so far?). Sprinkle a pinch of salt over the whole thing and stir.

In another small bowl, whisk together lemon juice, greek yogurt, chopped garlic, mint leaves, and cucumber. Add your salt and pepper to taste.
