Gnocchi with Caramelized Onions and Sweet Potatoes

Fall is in the air! Football is back on, the weather is getting cooler and I’m starting to feel those fall flavors!
I love a fresh bowl of gnocchi when the weather gets colder. To be honest, though, my go to sauce is a simple red sauce made with butter and onion, but here I made a sauce with brown butter + sage, roasted sweet potatoes, low + slow caramelized onions, crunchy toasted walnuts, freshly grated parmesan, and crispy sage leaves to finish it off. Feeling fancy AF guys + it’s so worth trying! try it with sweet potato, gnocchi also!

1 package of gnocchi, cooked per package instructions

2 small, peeled, diced sweet potatoes

2 thinly sliced onions

4 tbsp brown sugar, divided
-
8 tbsp unsalted butter, divided

kosher salt + pepper

1 tbsp extra virgin olive oil
-
10-15 fresh sage leaves, divided
-
fresh walnuts, toasted at 350 degrees for 5 minutes, optional but kind of not (if you know what I mean)
Method
🍠preheat oven to 425
🍠peel and dice a sweet potato, toss in olive oil + kosher salt & pepper, sprinkle with 2 tbsp brown sugar.
🍠roast in oven for 25-30 minutes, shaking the pan halfway.
🍠grab a very large frying pan, place it over medium low heat.
🍠melt 2 tbsp butter, peel and thinly slice two onions .
🍠place the onions in the pan, along with 2tbsp brown sugar, a heavy pinch of kosher salt + allow to cook for 30 minutes, stirring occasionally.
🍠toast + chop a handful of walnuts.
🍠 In another small pan, melt 3-4 tbsp of unsalted butter along with – handful of fresh sage leaves. Allow to brown on low, remove from the heat.
🍠when potatoes are roasted, toss them in the pan with the onions.
🍠optional but recommended- lightly fry some fresh sage. Have the heat on low and fry the leaves for 2-3 seconds and remove before they brown- this can happen quick. Drain on paper towels.
🍠cook gnocchi per package instructions, Drain, toss into the large pan with sweet potatoes, caramelized onions, and add the brown butter sage sauce. Heat on low until warmed through. Sprinkle freshly grated parmesan, the chopped roasted walnuts, and finish with the crispy sage.
