When I was young, my family would go to Phillips Candy in Boston. We’d always always always get coconut clusters. Maybe it’s nostalgia for me. Maybe it’s just because they’re that good, but something about them just makes me so happy.
Two ingredients, 5 minutes prep + 30 minutes in the fridge make this the easiest and tastiest Valentine's gift. And it’s totally something the kids can help make to maybe give to their grandparents, aunts, uncles, or teachers.
The Easiest Coconut Clusters Ever
Makes 12 clusters
- 1 cup unsweetened flaked coconut
- 1 cup semi sweet chocolate morsels
Line a baking sheet with parchment paper.
Toast the coconut over medium low heat for about 5 minutes, stirring occasionally.
While the coconut is toasting, melt your chocolate in the microwave in 20 second intervals, stirring after each interval.
When the coconut is nice and toasty, transfer to a bowl. Pour the melted chocolate in the bowl and stir.
Using a cookie scoop, place about 1/2-3/4 a scoop of the chocolate coconut mix on the parchment paper and repeat until the batter is gone.
Place in the refrigerator for 30 minutes then box up to give to your Valentine of choice; or keep them for you, because your worth it.
