Caprese Chicken Salad

Overview

I find myself, once again, living for all things with basil, and this chicken salad does it for me!

Takes all those caprese flavors and puts it in chicken salad form. I’m sold.

Serves 2-4 lunch portions

Shopping List

  • 1 cup sliced cherry tomatoes

  • 1 lb chicken boneless, skinless chicken breasts or thighs, cooked at 350 for 30 min

  • dressing, below

  • 1 tbsp fresh basil, julienned

  • (optional) 1/2 cup toasted pine nuts

For the dressing

  • 1/4 c mayo

  • 2 tbsp sour cream

  • 1 tbsp fresh lemon juice

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt, pepper to taste

  • serve w/ burrata or mozzarella

Method

Cook and chill the chicken, and then dice into bite sized pieces. Place the chicken, the sliced cherry tomatoes, and julienned basil, and toasted pine nuts (if using) in a bowl.

In another small bowl, mix up the dressing. Pour dressing on the chicken, and give everything a mix. If desired, add some fresh burrata or fresh mozzarella!
