Gluten Free Chocolate Cookies

Overview

If you want a chocolate cookie that will stop you in your tracks, this is it.

These cookies are IT for these reasons:

  1. Cocoa powder + powdered sugar is the “flour” that holds these cookies together a
  2. Egg whites make them nice and rich and chewy. 
  3. In under 20 minutes you’ll have addicting and chewy, delicious cookies

They can be made for Passover and year round. Hope you enjoy!

Shopping List

  • 1 bag (about 10 ounces) of semi-sweet chocolate morsels, melted and cooled⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3 egg whites (large size), room temperature. I used egg whites in a carton and ended up using 1/3 cup + 3 tbsp⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1.5 cups powdered sugar (plus extra for rolling the cookies- make sure to use Kosher for Passover for Passover)⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 cup cocoa powder⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 tsp kosher salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Flaked sea salt for sprinkling⠀⠀

Method

In a bowl, whisk the powdered sugar, cocoa powder, and salt together. Using an electric mixer, blend egg whites until soft peaks form. Add the melted chocolate.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Next you want to slowly add in the dry ingredients with the mixer. Batter will be thick. Stir in chocolate chips. Roll into balls (about a tbsp), then roll in extra powdered sugar. Sprinkle with sea salt if you dig it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 350 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Bake for about 10 minutes and allow to cool completely before eating!
