Chewy Chocolatey Cosmic Brownies

Just like the store bought but better!
Know those packaged cosmic brownies that are sold in the grocery store? These fudgy, delicious, and UBER chocolatey brownies are a play on those.
For many of my treats, I depend on my kids friends to be the taste testers, to give me feedback, and to tell me what needs to change. Well, these were gone REAL quick. Even the most chocolate loving 8- year old chocolate aficionado rated these real high, which to me says it all!
My version of the cosmic brownies is all homemade, minus the sprinkles on top (though you definitely could make them from scratch!), but don’t let that scare you; these chewy, chocolately cosmic brownies are easy to make!

Shopping List
For the brownies
- 1 cup unsalted butter, melted (16 tbsp)
- 1 1/2 cups cane sugar
- 3/4 cup light brown sugar
- 3 large eggs
- 1 large egg yolk
- 2 tsp pure vanilla extract
- 1 cup cacao flour
- 1 cup all purpose flour, spooned and leveled into a cup
- 1/2 tsp fine sea salt
For the ganache
- 9-10 oz chocolate chips; I used semi sweet
- 1 tbsp golden syrup or corn syrup
- 1/2 cup heavy cream

Method
To start making these delicious and decadent cosmic brownies, preheat your oven to 350 degrees and line a 9×13 pan with parchment paper.
Next, melt the butter in a large bowl. Stir in the sugars and then add the eggs. Stir after each egg addition. Lastly, add the vanilla. Set aside.
In a smaller bowl, sift together the cacao powder, flour, and salt.
Pour the dry ingredients into the wet ingredients and fold until just combined.
Pour the brownie batter into the prepared pan and bake in the preheated oven for 25-30 minutes until the batter somes out nearly clean on a toothpick. Allow the brownies to cool completely. Creamy Luscious Ganache
Now it is time to make the ganache. Pour the chocolate chips and golden syrup or corn syrup into a bowl. In a small bowl, warm the heavy cream for about 1 minute in the microwave. Remove the cream from the microwave and pour it over the chocolate chips. Allow to sit for a minute and stir the chocolate until melted, thick and luscious.
Layer the ganache on top of the brownies and finally sprinkle with rainbow sprinkles! Store in an airtight container for up to 5 days.
