Grain, Seed, and Nut Brittle

Snack attack, meet your match.

We have all been there. Working away, running errands, parenting hard…and then it hits you. The overwhelming feeling of hunger and an intense need for a snack. 

Not sure about you, but I love a crunchy snack. Something slightly sweet, but salty, crunchy, with varying textures…that’s what satisfies me, and do I have a recipe for you!

This nut, seed, and grain brittle is full of nutritious ingredients and my word is it addictive. 

It’s a cinch to put together. 1 bowl, a spoon, and a baking sheet and you’re good to go.

Shopping List

  • 1/2 cup quinoa, or a grain mix such as quinoa, millet, flaxseed, etc!
  • 1/2 cup salted pumpkin seeds
  • 1/2 cup sliced almonds
  • 1/4 cup chia seeds
  • 1/4 cup Maple syrup
  • 3 tbsp melted coconut oil or ghee
  • 2 tbsp sesame seeds

Method

Preheat oven to 325 degrees.

In a large bowl, combine all of the ingredients and stir.

Place the contents of the bowl on a baking sheet lined with parchment paper.

Bake in your preheated 325 degree oven for about 20 minutes until golden. Allow to cool completely and store in an airtight container in the fridge for up to a week!
