Herby Summer Salad

It’s full of mint, parsley, and dill with fresh cucumber, snap peas, and rice and the dressing is  bright, creamy, and lemony— This Herby Summer Rice Salad is literally summer in every bite.

Shopping List

  • 1/2 cup dry brown rice, cooked per package instructions
  • 1 large English cucumber chopped
  • 2 handfuls snap peas, blanched
  • 1/2 cup mint, chopped
  • 1/2 cup parsley, chopped
  • 1/2 cup dill, chopped
  • 1/2 cup chopped pistachios
  • 1/4 cup scallions, chopped
  • 1/2 cup whole milk ricotta 
  • 2 tbsp evoo
  • Zest and juice of 1 lemon
  • 1 tsp kosher salt
  • Fresh cracked pepper


  1. Prepare the salad dressing by whisking together the ricotta cheese, olive oil, lemon juice and zest, salt, and pepper in a small bowl. Set aside.
  2. Assemble the salad by combining the rice, snap peas, cucumbers, herbs and pistachios in a large salad bowl.
  3. Pour the dressing over the salad and toss until fully coated. 
  4. Serve cold or room temperature and enjoy!


This salad has become a go to for the summer!
