Egg White Muffins
Yeah, uh, waking up at 5:30 and making breakfast for the family is NOT my favorite thing to do.
To save myself time, I buy that carton of egg whites, and make some HIGH PROTEIN EGG CUPS.
These are assembled in under 5 minutes and bake in 20. You can double the recipe and make 12, make them the night before, and watch your entire family gobble. them. up. They are picky kid tested and approved, and the recipe is so adaptable!
Consider adding some chopped + sauteed baby spinach or kale, tomatoes, chopped chicken sausage– the possibilities are endless!
Makes 6 egg muffins

1 cup liquid egg whites
- 9 slices of turkey bacon, cut in half
- 3 slices of white american cheese, chopped
- 1 tsp kosher salt + fresh cracked pepper
Preheat oven to 350 degrees. Spray a muffin tin with non stick spray.
In a bowl, whisk the egg whites + salt + pepper together.
Arrange the turkey bacon on the bottom of the muffin cups to make a basket; place a 1/2 piece of bacon down, then place another 1/2 a piece perpendicular to the first piece, and then the last 1/2 piece of bacon diagonal on top of that piece. Repeat until the bacon is gone.
Then, pour in the egg whites until they’re almost at the top of each muffin tin and sprinkle the cheese equally throughout the egg whites.
Bake in the oven for 20 minutes and serve immediately or refridgerate until the next morning!
