Life Changing Gluten Free Chocolate Cookies

- 10 ounces 1 bag (about 10 ounces) of semi-sweet chocolate morsels, melted and cooled⠀⠀⠀⠀⠀⠀⠀⠀
- 3 large egg whites room temperature. I used egg whites in a carton and ended up using 1/3 cup + 3 tbsp⠀⠀⠀⠀⠀⠀⠀⠀
- 1.5 cups powdered sugar (plus extra for rolling the cookies- make sure to use kosher for Passover powdered sugar if making for Passover!
- 1/2 cup cocoa powder
- 1/4 tsp kosher salt
- Flaked sea salt for sprinkling⠀
In a bowl, whisk the powdered sugar, cocoa powder, and salt together. Using an electric mixer, blend egg whites until soft peaks form. Add the melted chocolate.⠀⠀⠀⠀⠀⠀⠀⠀⠀Then slowly add in the dry ingredients with the mixer. Batter will be thick. Stir in chocolate chips. Roll into balls (about a tbsp), then roll in extra powdered sugar. Sprinkle with sea salt if you dig it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀Preheat oven to 350 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀Bake for about 10 minutes and allow to cool completely before eating!
