1/2cupdry brown rice, cooked per package instructions

2cupssnap peas, blanched
1/2cupmint, chopped
1/2cupparsley, chopped
1/2cupdill, chopped
1/2cuppistachios, chopped
1/4cupscallions, chopped
1/2 cupwhole milk ricotta
2 tbspextra virgin olive oil
1largelemon, zested and juiced
1tsp1 tsp kosher salt
1/4tspfresh cracked pepper
Instructions
Prepare the salad dressing by whisking together the ricotta cheese, olive oil, lemon juice, salt, and pepper in a small bowl. Set aside.Assemble the salad by combining the rice, snap peas, cucumbers, herbs and pistachios in a large salad bowl.Pour the dressing over the salad and toss until fully coated. Serve cold or room temperature and enjoy!
