Preheat the oven to 350 degrees and line an 8×8 pan with parchment paper.
Mix together the flour, room temperature butter, and sugar in a medium bowl. Press dough into the prepared pan. Bake in the preheated oven for 20-25 minutes until golden and allow to cool.
While the shortbread is baking, place the peanut butter, sugar, and coconut oil (or butter) in a small sauce pan and mix on low heat. Stir until combined. Remove from heat.
Spread the peanut butter layer on top of the shortbread layer and place in the freezer for 30 minutes to chill.
Once the peanut butter layer is solid, melt your chocolate either by double boiler method or microwave. If using a microwave, melt in 20 second intervals, stirring after each one so that the chocolate doesn’t burn.
Once melted, spread on top of the peanut butter layer. Place in the fridge or the freezer until firm.
Cut the Peanut Butter Twix Bars any which way you want. Thin slices will look similar to a Twix candy bar, square pieces are good, also!
Store in the fridge for up to a week, if they last that long!
