Cheesy Stuffed Baby Bell Peppers

- 10-12 baby bell peppers, rinsed, sliced in half, and cleaned out
- 1 6 ounces log of goat cheese
- 6 ounces mozzarella cheese
- 1/2 tsp kosher salt
- fresh cracked pepper
- fresh chopped herbs: basil, chives, dill, oregano, thyme. I love basil + chives for this!
Preheat oven to 350 degrees.In a small bowl, mix together the goat cheese and mozzarella cheese. Sprinkle the salt, pepper and herbs. Place a couple tsp- tbsp of cheese mixture in each pepper half.Place in the 350 degree oven for about 15 minutes until golden and bubbly. Serve immediately!
