Bacon Cheeseburger Meatloaf

Overview

Growing up, meatloaf was a staple on our kitchen table. Sometimes you just crave that old school diner, homestyle comfort food.

I’ve amped this American classic by turning it into Bacon Cheeseburger Meatloaf. I like to serve this up with some creamy mashed potatoes or biscuits and roasted broccoli & cherry tomatoes.

Shopping List

For the meatloaf

  • 1 lb lean ground beef (90-93%)

  • 1 egg

  • 1 onion finely chopped

  • 3 garlic cloves minced

  • 1 cup breadcrumbs

  • 1/3 cup ketchup

  • 3 tbsp mayonnaise

  • 1 tbsp mustard (yellow or spicy brown)

  • 3 slices turkey bacon, cooked and chopped

  • 1 tsp kosher salt

  • freshly cracked pepper

  • 1/4 cup shredded cheddar cheese

Glaze

  • 1/4 cup ketchup

  • 1 tbsp mayonnaise

  • 2 tsp mustard (yellow or spicy brown)

Topping

  • 1/4 cup bread crumbs

  • 1/2 cup shredded cheddar cheese

  • 2 slices of turkey bacon cooked and crumbled

Method

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine all of the meatloaf ingredients and mix (hands definitely are the best tool here) until thoroughly combined.

Form the meat mixture into a loaf shape.
In a small bowl, whisk the glaze ingredients together. Spread the glaze on the top and sides of the loaf.

In the same bowl (whatever glaze is leftover on the sides allows the crumb mixture to stick together), add the 2 pieces of chopped bacon, the 1/4 cup of breadcrumbs, and 1/4 cup of shredded cheddar. Mix to combine. Sprinkle the topping on the top and sides of the glazed meatloaf.

Place in your preheated 350 degree oven for 35 minutes. Remove and serve!

Method

Combine all ingredients except the chocolate chips in a blender or a food processor and combine until smooth. Next, stir in the chocolate chips. Place on a baking sheet lined with parchment paper and scoop 1 Tbsp balls on the baking sheet. Place in the fridge til firm. Lasts up to a week in the fridge but TBH, they won’t make it that long!

Note: You can flatten these guys up to look more like brownies by spraying the bottom of a 1 cup measuring cup with nonstick spray and flattening the balls!
