Sometimes you just crave that old school diner, homestyle comfort food. I’ve amped this American classic by turning it into a Bacon Cheeseburger Meatloaf.

For the meatloaf
- 1 lb lean ground beef (90-93%)
- 1 large egg
- 1 medium onion finely chopped
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- 1/3 cup ketchup
- 3 tbsp mayonnaise
- 1 tbsp mustard (yellow or spicy brown)
- 3 slices turkey bacon, cooked and chopped
- 1 tsp kosher salt+ freshly cracked pepper
- 1/4 cup shredded cheddar cheese
For the glaze
- 1/4 cup ketchup
- 1 tbsp mayonnaise
- 2 tsp mustard (yellow or spicy brown)
For the topping
- 1/4 cup bread crumbs
- 1/2 cup shredded cheddar cheese
- 2 slices turkey bacon cooked and crumbled
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.In a large bowl, combine all of the meatloaf ingredients and mix (hands definitely are the best tool here) until thoroughly combined.Form the meat mixture into a loaf shape. In a small bowl, whisk the glaze ingredients together. Spread the glaze on the top and sides of the loaf.In the same bowl (whatever glaze is leftover on the sides allows the crumb mixture to stick together), add the 2 pieces of chopped bacon, the 1/4 cup of breadcrumbs, and 1/4 cup of shredded cheddar. Mix to combine. Sprinkle the topping on the top and sides of the glazed meatloaf.Place in your preheated 350 degree oven for 35 minutes. Remove and serve!
