Mediterranean Inspired Layered Dip

Take a walk with me down memory lane, if you will. Growing up, my mother would make this one type of appetizer.

It was full of flavor, full of fresh vegetables, and so easy to make it almost made you question the fact the dish was THAT good. That dish was a dip that combined cucumbers, tomatoes, peppers, and feta cheese. Some herbs. It was literally the best thing since sliced bread in the summertime. Fast forward, for a while in my young adult life, I actually recreated it and served it at parties. And then for some reason, I just stopped. Until now. I recently became an ambassador with Hood Cottage Cheese and immediately I thought of the most perfect recipe for the summer time. I thought to myself, “Jackie, you’re going to recreate your mother’s Mediterranean dip, but you’re adding cottage cheese!” Hood Country Style Cottage Cheese is LOADED with protein (13g per serving!), and is so creamy and delicious, I knew it would be the perfect addition to the flavors I was going for in the dip! Oh, and did I mention, this takes LESS THAN 5 MINUTES to assemble? It’s perfect for your next brunch, lunch, or happy hour!

Shopping List

  • 1, 16 ounce container of Hood Country Style Cottage Cheese

  • 2 ripe tomatoes, chopped (I used roma tomatoes!)

  • 1 cucumber, quartered and chopped

  • 1 yellow bell pepper, chopped

  • 1/4 cup of extra virgin olive oil

  • 1 tsp kosher salt

  • 1/2 tsp dried thyme

  • 1/2 tsp dried basil

  • fresh cracked pepper

  • 4 ounces crumbled feta

Method

  • In a bowl, combine the tomatoes, cucumber, and pepper

  • Whisk together the olive oil, salt, thyme, basil, and pepper and pour over the vegetables

  • Grab a dinner plate (about 10”), and layer the Hood Country Style Cottage Cheese on the bottom of the plate.

  • Scatter the vegetable mix on top of the cottage cheese.

  • Sprinkle the crumbled feta on top of the vegetable mix.

  • Serve with pita brea, pita chips, or just grab a spoon!
