Mediterranean Inspired Layered Dip

Take a walk with me down memory lane, if you will. Growing up, my mother would make this one type of appetizer.

- 1 16 ounce container of Hood Country Style Cottage Cheese
- 2 ripe tomatoes, chopped (I used roma tomatoes!)
- 1 cucumber, quartered and chopped
- 1 yellow bell pepper, chopped
- 1/4 cup extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- fresh cracked pepper
- 4 oz crumbled feta
In a bowl, combine the tomatoes, cucumber, and pepperWhisk together the olive oil, salt, thyme, basil, and pepper and pour over the vegetablesGrab a dinner plate (about 10”), and layer the Hood Country Style Cottage Cheese on the bottom of the plate.Scatter the vegetable mix on top of the cottage cheese.Sprinkle the crumbled feta on top of the vegetable mix.Serve with pita brea, pita chips, or just grab a spoon!
